  • 4 boneless skinless chicken breasts
  • 1 1/2 cups white wine
  • 1 cup heavy cream
  • 1 cup spinach leaves
  • 2 garlic cloves
  • 2 -3 shallots
  • 1 teaspoon olive oil
  • 1/4 cup sun-dried tomato
  • 1/4 cup parmesan cheese

Instructions
 

  • Prep - Mince the garlic and Chop the shallots. Grate the Parmesan cheese if necessary.
  • Saute the minced garlic and chopped shallots in the oil on medium. Add the chicken and cook the chicken thoroughly. After cooked through, remove chicken and set aside.
  • Then add the wine and cream to the same pan with the garlic and shallots (you may increase the amount of wine and cream if more sauce is desired). After the sauce is warmed, add the spinach leaves and sun dried tomatoes and let simmer on low heat until spinach leaves are wilted. Add most of the Parmesan cheese and return the chicken to the pan for a few more minutes.
