Here’s how to make this instant pot wine and dine chicken recipe:

Ingredients:

  • 8 boneless, skinless chicken thighs
  • 1 sweet onion, chopped
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup red wine
  • 1 can sliced black olives, drained
  • â…“ cup chopped cilantro and parsley (combined)
  • 1 tablespoon olive oil
  • Salt and black pepper

Instructions:

  1. Set your instant pot to sauté function and pour in the olive oil. Once hot, add in the chopped onion and garlic, and sauté until slightly golden.
  2. Add in the boneless, skinless chicken thighs to the instant pot and season them with salt and black pepper. Brown the chicken on both sides for about a minute and then remove from the pot.
  3. Pour in the red wine into the now-empty Instant Pot and use a spoon to scrape up any brown bits stuck to the bottom. Let it simmer for a couple of minutes until the strong alcohol smell goes away.
  4. Add back in the chicken along with any juices that escaped from it. Also, pour in one cup of chicken broth into the pot.
  5. Lock on the lid, and set it to “high pressure” for about ten minutes.
  6. When finished cooking, allow it to naturally release for about ten minutes before quick-releasing all remaining pressure.
  7. For some added zing, fold in some chopped cilantro and parsley, followed by a squeeze of fresh lime juice.

Serving Suggestions:

This recipe is best served over a bed of flavorful yellow rice or white rice as you deem fit. You can also garnish with chopped green olives before serving.

This meal can easily be served with a light and dry white wine, medium-bodied red wine like a coq au vin, or simply any wine you have on hand.

For those looking to switch things up, there are a variety of substitutions and variations you can make to this Instant Pot Wine & Dine Chicken Recipe. First, if you’re not a fan of chicken drumsticks or thighs, feel free to use boneless, skinless chicken breasts instead. The cooking time will remain the same, but the texture of the chicken will be slightly different.

Additionally, if you want to mix up the flavors, swap out the black pepper for white pepper or add in some crushed red pepper flakes for an added kick. Instead of green olives, try kalamata olives or capers. You can also experiment with different herbs like thyme or oregano in place of cilantro and parsley.

For a different twist on this recipe, you can try using white wine instead of red wine. This will give your dish a lighter flavor profile and pairs well with chicken breasts or shredded chicken breast. If you really love red wine, try using it in combination with beef broth or chicken broth to create a savory wine sauce with a heartier taste.

Feeling adventurous? Try making a Tuscan-style Instant Pot Chicken by adding in mushroom and onion as well as white wine for a deliciously creamy sauce. Or for something more classic, make an Instant Pot Coq Au Vin using bacon pieces to enhance that rich traditional French flavor.

With these substitutions and variations, the possibilities are endless when it comes to creating your own unique version of this easy and tasty Instant Pot Wine & Dine Chicken Recipe.

Speaking of which, you can’t forget about the wine! A glass of red wine would be the perfect match for this flavorful chicken recipe. If you’re looking for something light, try pairing it with a Pinot Noir or Chianti. But if you’re feeling bold and adventurous, pick up a bottle of Cabernet Sauvignon or Merlot to sip on as you enjoy your meal.

One of the best things about this Instant Pot Wine & Dine Chicken recipe is that it’s perfect for meal prep. You can easily make it ahead of time and store it in the fridge or freezer for a quick and convenient meal.

To make ahead, simply cook the recipe as directed, allow it to cool completely, and then store it in an airtight container or freezer-safe bag. It will keep well in the fridge for up to 4 days and up to 3 months in the freezer.

When you’re ready to reheat, there are a few different options depending on your preference. If you’re short on time, you can simply reheat individual portions in the microwave. For best results, place the chicken in a microwave-safe dish and cover with a splatter screen or paper towel. Heat on high for 1-2 minutes or until heated through.

If you prefer to reheat in the oven, preheat your oven to 350°F and transfer the chicken to an oven-safe dish. Cover with foil and bake for 15-20 minutes or until heated through.

For those who want an even quicker option, consider reheating your wine sauce chicken recipe using your Instant Pot. Simply add 1/2 cup water to the pot, place the chicken in a steamer basket, and steam for 5-6 minutes on high pressure.

Tips for Perfect Results

This recipe proves that good things come in small packages, thanks to the Instant Pot.

Alright, folks, let me tell you how to get the most out of this Wine & Dine chicken recipe. With my experience, I’ve got a few tips up my sleeve that will make your dish standout and become the ultimate weeknight dinner.

First up, when cooking meat in a pressure cooker like the Instant Pot, it’s essential to use enough liquid to avoid burning or scorching the bottom of the pot. In this recipe, we are using red wine; however, if you decide to go with white wine or switch out the liquid altogether, keep in mind that you’ll need at least two cups of liquid.

Another tip for perfect results is to give your chicken some color before adding any liquid to the Instant Pot. Sear it on all sides until golden brown; this way, it will have wonderful deep flavors in addition to being unbelievably tender.

Now, we talk about the chicken broth. Always use quality broth! It doesn’t change significantly from fresh homemade broth or store-bought. Still, remember that it is a fundamental ingredient in this recipe that ties everything together.

Next up, don’t be shy with the seasoning! Season the chicken drumsticks liberally with salt and pepper and seasonings before searing it. This way, flavor hits you at every bite.

Moreover, finish off your meal with fresh herbs like parsley and cilantro – they complement perfectly with slightly complex flavors of wines used here.

Last but not least, if you’re using boneless chicken breasts instead of thighs or drumsticks suggested here, be sure to reduce cooking time to four to five minutes as overcooking can ruin their texture.

So there you have it folks! Follow these simple tips for perfect results every time you cook this easy Instant Pot Wine & Dine Chicken Recipe.

Bottom Line

Believe it or not, this Instant Pot Wine & Dine Chicken Recipe is a game-changer that’s perfect for both beginners and seasoned home cooks. With its rich and savory flavors, this recipe can be served in different ways that will leave your loved ones wanting more. Plus, it only takes less than an hour to prepare and cook!

You can thank the red and white wine that amplify this dish’s flavor profile while the chicken breasts, chicken thighs or chicken drumsticks add tenderness and juiciness. The instant pot speeds up the entire process of making tantalizing chicken recipes like coq au vin or chicken marsala.

So if you want a quick and easy weeknight dinner recipe that tastes like something straight out of a fancy Italian restaurant, this Instant Pot Wine & Dine Chicken Recipe is definitely worth a try. Ingredients

  • 1 (5 ounce) bag of saffron yellow rice
  • 6 chicken drumsticks
  • 2 teaspoons olive oil
  • 1/2 teaspoon lime juice
  • 1/4 cup white wine
  • 1/4 cup red wine
  • 2 teaspoons parsley
  • 2 teaspoons cilantro
  • 4 garlic cloves
  • 1 small sweet onion
  • 10 green olives
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups water

Instructions

  • Set the instant pot to saute mode on medium heat.
  • add the olive oil while it's heating up.
  • add the chicken to the hot pot.
  • slice or chop the onion (however you prefer) and place in the pot with the chicken.
  • add the salt and pepper to the chicken. Turn the chicken every few minutes.
  • add the wines to the pot after the chicken and allow to caramelize a bit.
  • add the parsley and cilantro and garlic.
  • when the chicken is cooked and caramelized enough on the outside, you can add the water and then the rice. You don't have to worry about cooking the chicken thru because the pressure cook mode will do that work for you. The yellow rice usually comes with it's own spices so I tend not to add too much salt. so please salt to taste. Lime juice can be added now or after the pressure cook process.
  • Add the olives(green or black is fine). After giving the chicken and rice a good stir to make sure the rice is in the water, cover with the instant pot cover and set it to 12 minutes on manual mode.
  • I let the instant pot natural release for about 5 minutes. This was just enough time for my rice to still be nice and wet but not too soggy and not to dry. Just nice and sensual and deep in that wine flavor. If you use a bigger bag of yellow rice, let me know how this turns out. Thanks.
