Ingredients:

  • 4 lamb shanks
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 6 garlic cloves, minced
  • 2 cups red wine (use a rich red for best results)
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 cups water
  • 2 teaspoons dried rosemary

Instructions:

  1. Preheat the oven to 375°F.

  2. Season the lamb shanks with salt and pepper.

  3. In a Dutch oven or roasting pan over medium-high heat, add the olive oil and brown the lamb shanks on all sides until golden-brown, about 6 to 8 minutes. Remove from the pan and set aside.

  4. In the same Dutch oven, add the onions, carrots, celery, and garlic. Cook until softened for about 5 minutes, stirring occasionally.

  5. Pour in the red wine and let it simmer for about 3 to 4 minutes until it is reduced by half.

  6. Add the crushed tomatoes, tomato paste, water, and dried rosemary. Mix well and bring to a boil.

  7. Return the lamb shanks back to the pan with any accumulated juices. Be sure they are completely covered by the sauce.

  8. Cover with a tight-fitting lid or foil and bake in the preheated oven for approximately 3 hours, or until tender enough that meat falls off of bones.

  9. Once done baking, remove from oven and transfer cooked lamb to a plate when serving them with risotto or mashed potatoes.

  10. Meanwhile strain vegetables out from remaining sauce.

  11. Skim out excess fat. You can serve the sauce as is, or thicken it up by simmering until it reduces and thickens a bit.

The ultimate comfort food that will warm your soul

To achieve the perfect roasted lamb shanks with red wine, tomato and garlic risotto recipe, there are certain tips to follow. Firstly, it’s important to season your lamb shanks generously with salt and pepper before roasting in the oven. This not only enhances the overall flavor of the dish but also ensures a beautiful caramelized exterior.

Secondly, when making the risotto, it’s essential to add the chicken stock gradually while stirring constantly. Adding the stock slowly allows for the rice to cook evenly and release its natural starches, which yields a deliciously creamy texture.

Next, don’t rush the braising process of the lamb shanks. Slow cooking them in a Dutch oven or a slow cooker ensures that they become fall-off-the-bone tender and infuse with all the flavors of the wine and tomato sauce.

In addition, using fresh herbs such as parsley and rosemary can elevate the flavors of both the lamb shanks and risotto. Chopped fresh parsley adds a vibrant freshness to the dish while dried rosemary sprinkled over the roasted lamb enhances its aromatic profile.

Another tip is to let your roasted lamb shanks rest for at least 10 minutes before serving. This allows for all the juices to redistribute within and results in tender, moist meat that melts in your mouth.

Lastly, pairing this rich red wine dish with mashed potatoes or roasted vegetables can help balance out its flavor profile while also adding variety to your plate. With these simple yet effective tips, you’ll be sure to impress your dinner guests with a perfect plate of braised lamb shanks served alongside a deliciously creamy red wine risotto roast garlic on top!
