– 2 beef filet mignon steaks (6 oz each)
– Salt
– Pepper
– 1 tbsp olive oil
– 2 oz blue cheese crumbles
– 1 tbsp butter at room temperature
– 1 clove garlic, minced
– 1 tsp fresh rosemary, finely chopped

Directions:

  1. Preheat the oven to 400°F.
  2. Remove the steaks from the fridge and let them sit on the counter for about an hour before cooking to bring them to room temperature.
  3. Season the steaks generously with salt and pepper on both sides.
  4. Heat a skillet over medium-high heat until hot. Add olive oil to the skillet.
  5. Add the seasoned filet mignon steaks to the skillet and cook for 3 minutes on each side.
  6. Remove from skillet and allow them to rest for 5 minutes.
  7. Mix butter, garlic, rosemary, and blue cheese in a small bowl until well combined.

  9. Place them on a foil lined baking sheet with topping side up
  10. Bake them for approximately 10 minutes or until they are cooked through.

Tips:
– Use a meat thermometer to get your desired internal temperature reading for perfectly cooked steaks
– Allow your steak to rest before adding cheese topping so it won’t melt too much
– To make more servings without overcooking steaks, sear each steak, keep them in the oven for a bit longer

As a sommelier, I absolutely love the Red, Wine & Bleu Recipe for its perfect balance of sweet and savory flavors. It’s also incredibly versatile! Here are a few substitutions and variations you can try:

– Cheese: If you’re not a fan of blue cheese, feel free to substitute it with another cheese that melts well like gouda or brie. But if you want to keep the “bleu” in Red, Wine & Bleu, try using gorgonzola or roquefort instead.

– Meat: You don’t have to limit yourself to filet mignon or sirloin strip steak. This recipe works well with other cuts of beef like flank steak or even lamb chops! Just make sure to adjust the cooking time accordingly.

– Wine: While I highly recommend using a dry red wine for the sauce (like Malbec or Cabernet Sauvignon), you can experiment with other varieties as well. For a more robust flavor, try using a blend of several red wines. And if you’re feeling adventurous, add a splash of fruity rosé wine for a hint of sweetness.

– Fruits: The recipe calls for strawberries and pears as toppings, but you can switch it up with other fruits like figs or grapes. Don’t be afraid to mix and match different types of fruit to see which combination works best with your taste buds!

Remember, substitutions and variations are all about experimenting and finding what works best for YOU. So don’t be afraid to play around with the recipe and make it your own!

Serving and Pairing

A dish for the connoisseur who like to indulge in the finer things in life.

Well, how should I have this wine and bleu cheese masterpiece? Simple – treat it like royalty. This dish is a gourmet entrée that pairs wonderfully with bold red wines, like Malbec or Cabernet Sauvignon. A full-bodied red with a hint of berry is an excellent choice to compliment the blue cheese and crusted steak. Tassel Ridge Winery’s Ruby Cabarnet is a wine that fits the bill; its deep ruby color will add a distinct appeal to your dining table.

When serving the dish, pour yourself and guests a glass of this beautiful wine and enjoy it with every bite. The pour offers contradicting tastes which makes for a complementary experience between the food and food. The dry red wine sauce would require the red wine but for a perfect mix between flavor and aroma, you can combine it with rosemary-infused blue wine sauce recipe.

Serving Platefuls of Red Wine & Blue Cheese Steaks:

One way to indulge in this delicious dinner is to take every bite separately – meat, cheese crust, dipping sauce – but if that’s not for you – you can create beautiful steak sliders with mini phyllo shells replicas! Use prosciutto slices for buns before adding in the steak crusted filet mignon slices. For more fruity goodness paired onto your dish, add strawberries around your plate and lightly sauteed pears.

Love cheese? Add even more delicious cheesy vibes by mixing up some Blue Cheese Dressing on top of each sandwich. It won’t be complete without some finely chopped red onion cut thin in half moons.

Tired of imitation foods? Go for something classic! Remember the steakhouse salad? You can make that by chopping up some sirloin strip or using steak crusted filet mignon slices to add bulk to your salad alongside some lettuce. For an additional depth of complexity, add some black pepper lightly seasoning each side or sprinkle some cinnamon and a little brown sugar, just like what my sisterhood is doing for us – working together to change the world one suburb at a time.

Make-Ahead, Storing and Reheating

The combination of flavors and textures will make your taste buds go wild.
The combination of flavors and textures will make your taste buds go wild.

Now, let’s talk about prepping ahead and reheating for stress-free entertaining.

This is one of those recipes that is not recommended for making ahead since the phyllo dough will lose its crispness. However, you can prepare the blue cheese sauce and crumble your blue cheese in advance.

If you have leftovers, store them in the refrigerator for up to two days. To reheat the crusted filet mignon or sirloin strip, place them in a preheated oven at 350°F for about ten minutes or until warmed through.

To reheat the blue cheese sauce, transfer it into a small saucepan and warm on low heat until heated through to maintain its creamy texture. If it thickens up too much after refrigeration, add in a little milk or cream and whisk it together over low heat until it loosens up.

Remember to give your crumbled bleu cheese or cheese dipping sauce a good stir before serving again.

Now that you know how to make and store Red, Wine & Bleu Recipe let’s move ahead to tips for perfect results.

Tips for Perfect Results

To get the perfect result when preparing this dish, there are some tips that you should keep in mind. Here are some of the essential tips to make sure that the Red, Wine & Bleu filet mignon comes out perfect:

Firstly, make sure to allow the cheese mixture to reach room temperature before spreading it on the steaks. This will make it easier to spread and ensure that it melts smoothly on the steak.

Secondly, after crusting the steaks with the blue cheese mixture, make sure to chill them in the refrigerator for at least an hour. This process will help the crust adhere better to the meat so that it doesn’t fall off during cooking.

When cooking the steaks, use a heavy skillet heated over medium heat with olive oil. Heat until hot before adding the steaks to sear them. Searing allows for a nice crust to form and locks in all of the juices of the steak.

When making the red wine sauce, deglaze your skillet with beef broth and dry red wine. Add fresh rosemary and garlic, then allow it to simmer until it has thickened slightly. Use a good quality dry red wine like Malbec or Cabernet Sauvignon for a robust flavor.

For serving with sides, consider pairing with roasted pears or strawberries for a sweet contrast against the beef and cheese. Or roasted red onions or sautéed mushrooms work well too for added flavor dimension.

Lastly, ensure that you have a good quality wine on hand (like Tassel Ridge Winery’s Ruby Cabernet) for pairing with this amazing steak recipe. The right color is also important as there is nothing like sharing great moments with family and friends around delightful food and wine pairings.

These essential tips are simple yet crucial for a successful dish of Cheese crusted filet mignon called Red, Wine & Bleu recipe!

Does blue cheese go with red wine?

When it comes to pairing wine with meaty dishes, bold reds such as Malbec or Cabernet Sauvignon are a great choice. These full-bodied varietals compliment cheeses with higher fat content, particularly blue cheese. The intricate undertones of the red wine create a harmonious blend with the intense fats present in the cheese, which results in a more savory and flavorful experience.

Is red wine and blue legit?

RWB primarily functions in suburban swing districts in the US, working towards engaging women at a grassroots level and changing media narratives to better align with challenges faced by women in their daily lives.

What wine goes with bleu cheese?

As a sommelier, I have discovered various types of wines that perfectly complement certain dishes. One of my favorite combinations is blue cheese with Port wine, particularly Stilton. I find that Port’s rich flavor perfectly balances the pungent and salty taste of blue cheese. Another fortified wine that goes well with various dishes is Sherry, which has a unique and strong flavor profile.

In summary, as a sommelier, I have enjoyed discovering the intricate profiles of various types of wines and how they can complement different dishes. Whether you prefer a red, white or sparkling wine, there is always an opportunity to elevate your dining experience with a well-chosen glass of wine.

Why do you add red wine to beef?

When it comes to cooking, wine is an acid component that not only flavors but also tenderizes the outer layer of meat. Including a wine-based marinade in your cooking process helps to retain moisture in your meat, seafood, or poultry, resulting in a succulent dish.

What does red wine do in recipes?

When it comes to cooking, red wine can play a vital role in adding depth and flavor to many dishes. Its acidity and rich flavor profile make it a popular choice for marinades, as it helps to break down tough cuts of meat and infuse them with flavor. Additionally, it can be reduced down into a sticky glaze, providing a delicious and elegant finishing touch.
