  • boneless, skinless chicken breasts
  • Kosher salt
  • freshly ground black pepper

  • olive oil
  • butter
  • celery

  • fresh mushrooms (cremini or white button)
  • garlic cloves
  • bay leaf
  • dried thyme
  • white wine
  • chicken broth (low sodium)
  • fresh flat leaf parsley
  • heavy cream

Take note that there are two sets of ingredients: ingredients 1 for the chicken and ingredients 2 for the creamy mushroom sauce. Make sure you have all the listed ingredients on your kitchen counter before starting.

The Recipe How-To

“Comfort food with a sophisticated twist”

Preparing the chicken

First, season 8 boneless, skinless chicken thighs and 2 boneless, skinless chicken breasts with salt and white pepper. Then, dust them with all-purpose flour just before you begin to brown them.

Browning the chicken

Heat a large Dutch oven over medium-high heat and add 2 tablespoons of olive oil and 1 tablespoon of butter until the butter melts. When the pan is hot, place the chicken in it and cook for about 5 minutes on each side, or until browned all over. Make sure not to overcrowd the pan as this would steam the meat instead of browning it.

Creating the wine sauce base

Remove the chicken from the pot and keep it warm on a plate covered with foil. Add another tablespoon of butter to the pot and sauté 8 sliced fresh mushrooms along with 1 diced onion, 2 celery stalks chopped into small pieces, and 1 carrot diced into small pieces. Cook them for about 5 minutes or until they become soft.

Adding garlic flavor

Add in minced garlic cloves (about 4) and cook for another minute or so.

Deglazing with white wine

Slowly pour in a full bottle of white wine while using a wooden spoon to scrape off any browned bits on the bottom of the pan. Let it simmer for a few minutes until you can smell the fragrance of wine filling up your kitchen.

Braising the chicken

Return the chicken to the pan along with any juices that accumulated on the plate. Add in some more chicken broth (about 1 cup), a couple sprigs of fresh parsley, a bay leaf, and some dried thyme (around one teaspoon). Bring it to a boil then reduce heat and let it simmer gently uncovered until all pieces are fully cooked through (approximately 30-35 minutes).

Creating the creamy white wine sauce

Remove the chicken from the pan and discard the bay leaf and parsley sprigs. Increase the heat to high and let the remaining liquid reduce down to around 2 cups. Then, add in roughly chopped or grated Comté cheese (about half a cup), 1/4 heavy cream, and 1 tablespoon of Dijon mustard. Whisk these ingredients together to create a rich creamy white sauce.

Serving and enjoying

Serve the braised chicken with the creamy white wine sauce on top. This dish tastes best when served hot with a side of roasted potatoes or wild rice pilaf. Enjoy!

3. Replace the mushrooms with another vegetable, such as zucchini, eggplant or bell peppers.

4. Add some bacon or pancetta to the dish for a salty, smoky flavor.

5. Try different herbs and spices, such as rosemary, sage, cumin or smoked paprika, to add more depth to the sauce.

6. For a creamier sauce, use heavy cream or crème fraiche instead of chicken broth.

7. Make it gluten-free by using a gluten-free flour substitute such as cornstarch instead of all-purpose flour.

8. For a dairy-free version of this recipe, use olive oil instead of butter and coconut cream instead of heavy cream.

Serving and Pairing

“A dinner to impress your guests or treat yourself”

Once you have the braised chicken with creamy wine sauce ready, it’s time to savor its flavors and pair it with other dishes that complement it well. Because of the rich, creamy flavor and aroma of this dish, it is best paired with a medium-bodied white wine such as Chardonnay or Pinot Grigio, which will bring out the subtle notes of the chicken and the spices used in the recipe.

When serving braised chicken with creamy wine sauce, you can also add some sides that will enhance its taste even further. As this dish is very rich and savory, you may want to balance its flavors with something refreshing like a crisp garden salad or roasted vegetables such as broccoli or green beans. A side of mashed potatoes or steamed rice will also be a great choice as they can soak up the savory sauce and provide you with all the nutrients and energy you need.

If you want to add some crunch to your meal, try serving it with some crusty bread, which can also dip into the luscious creamy sauce for extra flavor. Alternatively, if you want something more indulgent, pairing braised chicken with creamy wine sauce with pasta or noodles will take your dinner to a whole new level.

Overall, braised chicken with creamy wine sauce pairs well with a range of dishes and drinks that offer different flavors and textures. Experimenting with different options until you find what works best for you is part of the fun of cooking and eating delicious food.

“Wine and dine with Braised Chicken With Creamy Wine Sauce”

If you’re looking to save some time, this braised chicken recipe is perfect for preparing in advance. The recipe can easily be made ahead of time and stored in the refrigerator for up to two days. To reheat, simply place the chicken and sauce in a skillet over low heat until warmed through, stirring occasionally.

If you have any leftovers, store them in an airtight container in the refrigerator for up to three days. To reheat, place the chicken and sauce in a microwave-safe dish and microwave on high for 1-2 minutes or until heated through. You can also reheat in a skillet over medium-low heat, stirring occasionally.

Just be sure not to overheat the chicken when reheating as this can cause it to dry out. Additionally, the sauce may thicken when refrigerated, so you may need to add a splash of chicken broth or white wine when reheating to adjust the consistency.

Tips for Perfect Results

“Flavors that will make your tastebuds sing”

Cooking braised chicken with creamy wine sauce requires some patience, technique, and tips to make sure that the dish comes out perfectly prepared. In this section, I’ll share with you my expert tips on how to achieve ideal outcomes every time you prepare this savory recipe.

1. Use Fresh Ingredients

When making any dish, using fresh ingredients can make a significant difference in the final flavor of the dish. Fresh mushrooms, celery, carrot, onion, and garlic cloves add a depth of flavor that cannot be achieved by using their powdered forms.

2. Brown the Chicken Thoroughly

One of the most important aspects of braising chicken is browning it first. This method enhances the chicken’s texture and flavor while also contributing to the overall richness of the recipe. Make sure that you brown each side of the chicken for at least 5 minutes before adding it to the pot to braise.

3. Use a Dutch Oven or Le Creuset

Using a high-quality Dutch oven or Le Creuset will guarantee an evenly cooked chicken that is tender and juicy on the inside while still maintaining its shape on the outside. The heavy bottom of these pots distributes heat evenly while keeping it in, resulting in consistent and effective cooking.

4. Let it Simmer Slowly

Low heat is critical when slow-cooking chicken in creamy white wine sauce; a low temperature ensures that your dish cooks evenly while locking in all of the delicate flavors. Resist the temptation to rush through cooking by achieving perfect results with a gentle simmer.

5. Finish Strong with Creamy Mushroom Sauce

Once your chicken has finished cooking, take it up a notch by adding an exquisite creamy mushroom sauce base for serving or pouring over hot pasta or rice for delicious leftovers. You can achieve a perfect creamy finish by adding cream cheese instead of cream to thicken your sauce without sacrificing taste.

By following these tips and techniques for cooking braised chicken with creamy wine sauce, you’re guaranteed to taste the difference and perfect the dish every time. Celebrate simply and indulge in a bowl of creamy wine braised chicken today!
